Moroccan Spiced Grilled Chicken Breasts

Difficulty: If you have a well-stocked spice rack, as easy as taking the teaspoon out of the drawer. Easy, breezy, beautiful chicken breasts.

Verdict: Good. Considering the variety of spices involved, I expected the flavors to be a bit more intense. I think the issue there was that I didn’t measure the salt…I eyeballed it and probably skimped a little. Even though there was yogurt involved I felt like it could have used a bit of help from something citrus, maybe. Some fresh lime juice, perhaps. But maybe I should try using the correct amount of salt before I go fiddling…

Variations: None.

Comments: While the grill preheated, I lightly microwaved some broccoli, sauteed it a bit to finish it, and dressed it with a simple vinaigrette. While the chicken cooked and rested, I threw some (already cooked) oven fries in the toaster oven. By that time the broccoli salad was room temp, which was what I wanted. I didn’t take a picture, but it came out looking pretty much like the picture on the Simply Recipes site. The paprika gives it good color.
